Perish of the Xúquer

Khaki with Denomination of Origin of Ribera Alta del Xuquer, has hard pulp, can be peeled and cut like an apple. It is harvested semi-mature and must be subjected to a desastringent treatment.

This procedure eliminates astringency, as this variety of perki before reaching the maturity point is very astringent and therefore would not be suitable for consumption.
